BRINJAL RAITHA

INGREDIENTS
  1. BRINJAL ---200 GMS
  2. CURD ----2 CUPS.
  3. COCONUT(GRATED)---4 TSP
  4. JEERA ----1 TSP
  5. GREEN CHILLY(CHOPPED) ----1 NO
  6. SALT' TO TASTE.
  7. OIL ----1 TSP
  8. ONION, CORIANDER LEAVES ----EACH 2 TSP (CHOPPED)
    OPTIONAL.



PREPARATION

WASH AND WIPE BRINJALS. FULLY COAT WITH OIL ,POKE 5,6 TIMES WITH FORK OR,KNIFE.
BECAUSE WHEN WE COOK THE BRINJAL IN DIRECT FIRE,INNER PART ALSO COOKED
POKE THE BRINJAL WITH KNIFE,DIRECTLY SHOW IN GAS FLAME,OR PLACE IN MICRO-WAVE OVEN
80% POWER FOR 3 TO 5 MINS.PEEL-OFF THE SKIN,SMASH WELL AND KEEP ASIDE.

CURD SHOULD BE VERY THICK.
HEAT OIL,ADD MUSTARD SEEDS,JEERA ,CHILLI.
MIX CHOPPED ONION, CHILLY,GRAED COCONUT AND SALT.WAIT FOR 10 MINS
REFRIGIRATE. AND SERVE CHILL.
INSTEAD OF ONIONS,WE MAY ADD CHOPPED MANGOS.

GARNISH WITH CHOPPED CORIANDER.

METHOD-2
CUT THE BRINJALS IN BIG-SHAPES,COOK-WELL.PEEL THE SKIN,SMASH WELL.
MIX WITH CURD AND TEMPER WITH MUSTERD SEEDS.
